Recipes & Tips

ASAP is always collecting recipes that use local products. If you have a recipe you'd like to share, click here. It's tomato time!

Raw Tomato Sauce with Avocado, Capers, and Basil

Ingredients:
4 ripe local tomatoes
2 cloves garlic
2 tbsp. capers, minced
2 tbsp. fresh basil
¼ cup olive oil       
1 tsp. salt
½ tsp. hot pepper flakes
1 lb. angel hair pasta
1 medium avocado
2 tbsp. lemon juice

Method:
Cut tomatoes into ½ inch cubes. Toss them with garlic, capers, basil, oil, salt and pepper flakes in a bowl large enough for pasta. Set aside for 20 minutes to marinate. Add salt and pepper. Bring water to boil for pasta and cook. While it's boiling, peel and cut avocado and toss it with lemon juice and salt. Drain the pasta and toss into bowl with tomato mixture. Mix well and put into bowls. Divide avocado amongst servings.
